Golden Chicken N Rice

Golden Chicken N Rice

1 package long grain and wild rice
1 can condensed cream of mushroom soup, undiluted
1 can condensed cream of celery soup, undiluted
1 1/2 cups water
4 chicken leg quarters
1 envelope onion soup mix

In a large bowl, combine rice, contents of seasoning packet, soups and water.  Spread into a 13x9" baking dish. Top with chicken and sprinkle with onion soup mix. (we use 1/2 package of soup mix b/c we're not big onion fans)

Cover and bake at 350 degrees for 2 hours until a meat thermometer reads 180 degrees and rice is tender.  If you want the chicken crispier you can cook it uncovered for 1 hour also.

I don't have a thermometer but I know it's done with the meat is falling off the bone :)

The main recipe came from Tast of Home Almost Homemade but I've made a few alterations to suit my family.
