Cheesy O'brien Egg Scramble
1 package frozen o'brien potatoes
1/2 tsp garlic salt
1/4 tsp pepper
1 can condensed cheddar cheese soup, undiluted
1 pound sliced bacon, cooked and crumbled
12 eggs, lightly beaten
2 tbsp butter
2 cups shredded cheddar cheese
Prepare hasbrowns accoridng to package. sprinkle with garlic & pepper. Transfer to a greased 2 1/2 qt baking dish. Top with soup. Set aside 1/2 cup bacon; sprinkle remaining bacon over soup. In a bowl wisk eggs. In another skillet (I used same as hasbrowns) heat butter until hot. Add eggs; cook and stir over med heat until eggs are nearly set. Spoon over bacon. Sprinkle with cheese and rest of bacon. Bake uncovered at 350 degrees for 20-25 min until cheese is melted.
This recipe I got out of the Taste of home Almost Homemade recipe book. My hubby & kids loved this. I know they like it when there are no leftovers after dinner.
